Courtesy of my wife’s friend Joy here is the recipe English Pub Cheese. The Boddington’s, Kerrygold and Colman’s are very specific ingredients but I feel they are all key to the final product.
1 package (7 ounces) Kerrygold Dubliner Cheese
1 package cream cheese
1/4 cup Boddington’s beer
3 teaspoons Colman’s Mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon Cayenne
Shred cheese finely or chop it up finely in food processor. Then add the rest of the ingredients into the food processor and mix it until it is well combined. It should have a consistency similar to cookie dough. Awesome with pretzels, crackers and everything. Depending on your preferences you might like more or less mustard, cayenne and Worcestershire sauce.
